BODACIOUS BITTER

Most of you are by now familiar with English-style bitters, a broad class of ales (ordinary bitter, special bitter, and extra special bitter) delineated by original gravity and alcohol content.
Bodacious Bitter, so called as to distinguish it from our well-known “Bitchin’ Bitter,” falls into the same category, being on the lighter end of the spectrum overall. What sets it apart, however, is the fact that is it hopped with only one single variety, and features an unusual malted grain in the mash.
So, now you’re curious, eh?
Stemming from our cask ale experiments using single hop varieties, we have utilized the noble British variety known as Fuggles for all kettle and dry-hop additions, lending a prominent grassy, earthy, somewhat spicy hop aroma and flavor.
In addition to British pale and dark caramel malted barley, we have incorporated malted rye in the mash to offer a slight toasty, nutty character. Rye is rarely used in brewing because, like wheat, it has no husk and is therefore prone to gumming things up and being pretty uncooperative. Ben and I, however, have employed special, secret and ancient brewing techniques to avoid any such problems and present a deep amber-colored ale with a deliciously understated malt profile.
This session beer is an excellent, lower ABV alternative to the roster of ethanol-charged beers on the menu, but still offers the formidable hop character and assertive maltiness that CBCers have grown to expect.
