Belgian-style Dubbel Ale
The latest installment in the Cambridge Brewing Company’s ever-continuing series of Belgian-style offerings, Abbey Normal is what would be referred to as a dubbel (or double) ale. The style originated in the breweries of Belgium’s Trappist monasteries, and is now recreated by brewers both secular and non.
We used Belgian malted specialty barleys in the mash, dark candi sugar in the kettle, and our signature Belgian yeast in fermentation and conditioning. The beer, served in its signature tulip-shaped glass, has an attractive deep reddish-brown hue. If you are not suffering from a winter cold, you should notice an unusual but commingling of aromas including, but not limited to: sweet malt, with a slightly raisiny tinge; a soft touch of noble Hersbrucker hops; and that unique bouquet of fruit and spice that seems only to come from a true Belgian ale yeast. Full-bodied, and with spritzy yet gentle carbonation, swirl it over your palate and smile. Sweet maltiness with notes of raisins, plums, and figs, and that enigmatic Belgian magic again. Down the hatch. The final finish is slightly warming, then a bit sweet, then moderately long and dry with an almost tart hop note.
Following in the tradition of our other Belgian ales (Tripel Threat, le Pet du Coq, Half-Wit, Saison du CBC, and Golden Ring Pale Ale) and the traditions of the true Trappist innovators before us, Abbey Normal Dubbel-style Ale is an authentic and unique representation of the Belgian magic. (And it tastes great!!)
